Equipment you'll need: baking sheet, serving bowl
Ingredients: makes 2 servings
- 2 large beets, cubed
- 1/2 cup green onions, sliced
- 2 Tbsp vegetable broth
- salt and pepper, to taste
Method:
- Preheat oven to 375F and spray baking sheet with non-stick cooking spray.
- Place cubed beets on baking sheet and drizzle with vegetable broth.
- Bake for 30 minutes.
- Place roasted beets in serving bowl, add in green onions, salt, and pepper and toss.

Do you peel the beets? Do you boil them then skin them? Or wash them and then dice them?
